类化合物在香料中占有特别重要的地位，大多具有花香、果香、酒香或蜜香香气，广泛存在于自然界中，在调配各种香型的香精时，部分酯类能起到定香剂的作用，不能赋予决定性的香气，但可以起增强与润和作用。所以各类香型的香精中都含有酯类化合物，其产量也名列前茅。
